Pam
and José have owned the New Ferry restaurant for well
over a decade. In that time they have made it their business
to see that every guest receives that personal touch that
makes each visit a positive and memorable one. Though there
is no strict dress code for their guests, the staff all dress
in formal attire and still perform full silver service.
José has been in the
catering business for some three decades. A one time Chairperson
of Sheffield's Guild of Sommeliers, his love of fine food
and wine is exemplified by his extensive wine list. José
has personally selected wines for his celler from around the
world. It is his hope that he might pass on some of his passion
to all that partake.
While José has the front
of house under control, Pam is whipping up a storm in the
kitchens. Every detail of every meal is overseen in the most
minute detail. Long hours are spent roaming through Newark's
market and local farms for the freshest produce; Fresh seafood
and meat is couriered in; And herbs are picked straight from
the garden. These elements are then woven together to create
the innovative and mouth watering menus that have become Pam's
touchstone.
